Keep it flat and oiled.
A board this thick will last decades if you do four things.
1
Wash by hand
Warm water, a little soap, a cloth. Never the dishwasher and never a soak in the sink.
2
Dry it standing up
Wipe it down and stand it on edge so both faces dry evenly. Laying it flat while wet is how boards cup.
3
Oil it when it looks thirsty
Food-safe mineral oil or a board butter, wiped on, left twenty minutes, wiped off. Once a month at first, then whenever it looks dry.
4
Store it flat or on edge
Keep it out of the sun. Heat and direct sun dry one face faster than the other.
Do
- Cut on the groove side and serve on the flat side, or the other way round. Both faces are working faces.
- Expect the brass to darken. It is supposed to.
- Oil it whenever the wood looks dry or pale.
Don't
- Leave it under a hot pan or on a hot grill grate.
- Use bleach, vinegar, or lemon to clean it. Soap and water is enough.
- Worry about small seasonal movement. Wood breathes, and glue seams and inserts are covered by the warranty.
